Description

Bacon Jalapeño Popper Eggrolls deliver a crispy, flavorful bite combining creamy cheese, smoky bacon, and spicy jalapeños wrapped in a golden fried eggroll wrapper. Perfect as a party appetizer or a spicy snack, these eggrolls balance heat and richness with a satisfying crunch.

Ingredients

Scale

Filling

  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 jalapeños, seeded and finely chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon chopped fresh chives

Eggrolls

  • 8 eggroll wrappers
  • 1 egg, beaten (for egg wash)
  • Vegetable oil for frying

Instructions

  1. Prepare the filling: In a medium bowl, combine softened cream cheese, shredded cheddar cheese, crumbled bacon, finely chopped jalapeños, garlic powder, smoked paprika, and chopped fresh chives. Mix thoroughly until evenly combined.
  2. Assemble the eggrolls: Lay one eggroll wrapper flat on a clean surface in a diamond shape. Spoon about 2 tablespoons of the filling near the bottom corner of the wrapper. Fold the bottom corner over the filling, then fold in the sides tightly. Roll the wrapper upward toward the top corner, sealing the edge firmly with the beaten egg wash to keep the eggroll closed. Repeat with remaining wrappers and filling.
  3. Heat the oil: In a deep skillet or deep fryer, heat vegetable oil to 350°F (175°C), enough to submerge the eggrolls for even frying.
  4. Fry the eggrolls: Carefully place the eggrolls in the hot oil in batches, frying each for 2-3 minutes per side or until golden brown and crispy. Avoid overcrowding the pan to maintain temperature.
  5. Drain and serve: Remove eggrolls with a slotted spoon and drain on paper towels to remove excess oil. Serve immediately while hot with your favorite dipping sauce such as ranch or creamy sriracha.

Notes

  • For a baked alternative, preheat oven to 400°F (200°C), brush eggrolls lightly with oil or cooking spray, and bake for 15-20 minutes until golden and crispy.
  • Adjust the amount of jalapeño to control spice level according to your preference.
  • These eggrolls pair wonderfully with ranch dressing or a creamy sriracha sauce for dipping.
  • To make this recipe gluten-friendly, substitute regular eggroll wrappers with gluten-free wrappers.
