- Beat Egg Whites: In a clean, dry bowl, use an electric mixer to beat the egg whites and cream of tartar on medium speed until soft peaks form, ensuring the whites have maximum volume.
- Add Sugar Gradually: Gradually add granulated sugar one tablespoon at a time, continuing to beat the mixture until stiff, glossy peaks form and the sugar is fully dissolved for a smooth texture.
- Fold in Vanilla and Color: Gently fold in vanilla extract and optional food coloring, taking care not to deflate the whipped egg whites.
- Shape Meringues: Using a piping bag or spoon, drop or pipe small mounds of the meringue mixture onto the prepared baking sheets, spacing them about 1 inch apart to allow even baking.
- Bake: Bake the meringues for 1 hour to 1 hour and 15 minutes, until they’re dry and crisp on the outside, providing the signature crunch.
