Instructions

  1. Boil the noodles: Bring 3 cups of water to a rolling boil in a medium pot. Add ramen noodles and cook according to package instructions until just tender, usually about 3-4 minutes.
  2. Prepare the buldak sauce: While the noodles are cooking, combine gochujang, gochugaru, soy sauce, sesame oil, minced garlic, grated ginger, sugar, and 1/2 cup water in a small bowl. Mix well to create a smooth, spicy sauce.
  3. Drain the noodles: Drain the noodles but leave about 2 tablespoons of the cooking water in the pot to help loosen the sauce later.
  4. Combine noodles and sauce: Return the pot with noodles and reserved water to low heat. Pour in the buldak sauce and stir continuously to coat the noodles evenly with the rich, spicy sauce.
  5. Add cheese (optional): If using mozzarella cheese, sprinkle it over the coated noodles and cover the pot with a lid. Let it sit for 1–2 minutes on low heat to allow the cheese to melt thoroughly.
  6. Serve and garnish: Transfer the coated noodles to serving bowls. Top with sliced green onions and toasted sesame seeds. Optionally, garnish with boiled eggs for added protein and flavor.
