Ingredients
Scale
Noodles
- 200 grams rice noodles
Protein and Vegetables
- 1 pound ground chicken
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 3 green onions, sliced (divided)
Sauces and Oils
- 2 tablespoons vegetable oil
- 3 tablespoons sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
Seasonings
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook Noodles: Cook the rice noodles according to package instructions until tender, then drain and rinse under cold water to stop cooking and prevent sticking.
- Prepare Aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat, then add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant to build the base flavor.
- Cook Ground Chicken: Add the ground chicken to the skillet, breaking it up with a spatula. Cook until browned and fully cooked through, about 5 minutes. Season with salt and black pepper to taste.
- Cook Vegetables: Stir in the red bell pepper and julienned carrot. Cook for 2 to 3 minutes until vegetables are tender-crisp, maintaining some crunch for texture.
- Toss Noodles with Sauce: Add the cooked rice noodles, sweet chili sauce, soy sauce, rice vinegar, and sesame oil to the skillet. Toss everything together until noodles are evenly coated and heated through.
- Add Green Onions: Stir in most of the sliced green onions, reserving a few slices for garnish to add fresh flavor and color.
- Serve: Divide the noodles among plates and garnish with the remaining green onions before serving hot.
Notes
- Use fresh rice noodles for best texture; soak dried noodles in hot water if fresh is unavailable.
- Adjust the amount of sweet chili sauce depending on your preferred sweetness and spice level.
- For a gluten-free option, use gluten-free soy sauce or tamari.
- Optional: add a sprinkle of toasted sesame seeds or chopped peanuts for extra crunch.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat gently to avoid drying out.
