Scale
Main Ingredients
- 1 pound smoked sausage
- 2 cups sweet potatoes, peeled and diced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small red onion, sliced
- 2 cups broccoli florets (optional)
Honey Garlic Sauce
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard (optional)
- 1/2 teaspoon black pepper
- a pinch of red pepper flakes (optional)
Instructions
- Preheat the Oven: Preheat your oven to 400°F and line a large sheet pan with parchment paper to prevent sticking and make cleanup easier.
- Prepare Sweet Potatoes: Place the diced sweet potatoes on the sheet pan and drizzle with a little olive oil or 1 tablespoon of the prepared honey garlic sauce. Toss the potatoes to ensure they are evenly coated.
- Start Roasting Sweet Potatoes: Roast the sweet potatoes in the oven for 15 minutes to give them a head start on cooking and caramelize their edges.
- Add Remaining Ingredients: Remove the sheet pan from the oven and add the smoked sausage, chopped red and green bell peppers, sliced red onion, and optional broccoli florets on top of the partially roasted sweet potatoes.
- Coat with Honey Garlic Sauce: Pour the honey garlic sauce over all the ingredients on the sheet pan, then toss gently to coat everything evenly in the sauce.
- Finish Roasting: Return the sheet pan to the oven and roast for an additional 15 to 20 minutes, tossing the ingredients halfway through, until the sweet potatoes are tender and the sausage is nicely browned.
- Serve: Serve the Honey Garlic Sheet Pan Sausage hot. It can be enjoyed on its own or served over rice or quinoa. Be sure to spoon any remaining pan sauce over the top for extra flavor.
Notes
- Optional broccoli can be omitted or substituted with another vegetable like zucchini or green beans.
- Dijon mustard and red pepper flakes add extra flavor depth but are optional.
- Use low-sodium soy sauce to control the saltiness of the dish.
- For a gluten-free version, ensure the soy sauce is gluten-free or substitute with tamari.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated.
