Description

This Lazy Day Vegetable Lasagna combines the ease of frozen ravioli with fresh vegetables and creamy Alfredo sauce, all cooked in a slow cooker to create a comforting, cheesy, and hearty meal perfect for busy days or relaxed weekends.

  • 15 oz jar of Alfredo sauce
  • Two (25 oz) packs of frozen ravioli
  • 1 cup carrots, shredded
  • 2 cups handfuls of fresh spinach
  • 8 oz pack of mozzarella, shredded
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter, melted


Instructions

  1. Alfredo goes in the slow cooker: Pour the Alfredo sauce straight into the bottom of your slow cooker to start the base of your lasagna layers.
  2. Lay down the first ravioli layer: Place your first group of frozen ravioli evenly over the Alfredo sauce at the bottom of the slow cooker.
  3. Pop in the veggies: Spread fresh spinach and shredded carrots on top of the ravioli layer to add a fresh vegetable layer.
  4. Drop the second round of ravioli: Add another layer of frozen ravioli over the veggies, then pour some more Alfredo sauce on top to keep it moist and creamy.
  5. Stack the layers again: Continue layering ravioli, vegetables, and Alfredo sauce until all ingredients are used up, making sure to finish with a layer of Alfredo sauce on top.
  6. Get the mozzarella ready: Prepare shredded mozzarella cheese to sprinkle over the top later.
  7. Sprinkle mozzarella cheese all over the top: Evenly distribute the shredded mozzarella on the very top layer of Alfredo sauce.
  8. Prepare panko breadcrumb topping: Mix melted butter with the panko breadcrumbs and sprinkle this buttery mixture over the mozzarella layer for a crunchy topping.
  9. Let it cook away: Set your slow cooker to high for about 3 hours or low for 6 hours, until the lasagna is bubbling and the cheese is nicely melted and golden on top.
