This Lazy Day Vegetable Lasagna combines the ease of frozen ravioli with fresh vegetables and creamy Alfredo sauce, all cooked in a slow cooker to create a comforting, cheesy, and hearty meal perfect for busy days or relaxed weekends.

- 15 oz jar of Alfredo sauce
- Two (25 oz) packs of frozen ravioli
- 1 cup carrots, shredded
- 2 cups handfuls of fresh spinach
- 8 oz pack of mozzarella, shredded
- 1 cup panko breadcrumbs
- 2 tablespoons butter, melted
Instructions
- Alfredo goes in the slow cooker: Pour the Alfredo sauce straight into the bottom of your slow cooker to start the base of your lasagna layers.
- Lay down the first ravioli layer: Place your first group of frozen ravioli evenly over the Alfredo sauce at the bottom of the slow cooker.
- Pop in the veggies: Spread fresh spinach and shredded carrots on top of the ravioli layer to add a fresh vegetable layer.
- Drop the second round of ravioli: Add another layer of frozen ravioli over the veggies, then pour some more Alfredo sauce on top to keep it moist and creamy.
- Stack the layers again: Continue layering ravioli, vegetables, and Alfredo sauce until all ingredients are used up, making sure to finish with a layer of Alfredo sauce on top.
- Get the mozzarella ready: Prepare shredded mozzarella cheese to sprinkle over the top later.
- Sprinkle mozzarella cheese all over the top: Evenly distribute the shredded mozzarella on the very top layer of Alfredo sauce.
- Prepare panko breadcrumb topping: Mix melted butter with the panko breadcrumbs and sprinkle this buttery mixture over the mozzarella layer for a crunchy topping.
- Let it cook away: Set your slow cooker to high for about 3 hours or low for 6 hours, until the lasagna is bubbling and the cheese is nicely melted and golden on top.
