Description

This Slow Cooker Chocolate Lava Brownie Pudding features a rich, gooey brownie with a molten chocolate center, slow-cooked to perfection. It’s an easy and indulgent dessert that delivers warm, fudgy chocolate bliss without the need for an oven.

Ingredients

Scale

Brownie Batter

  • 1 box of brownie mix (about 18 oz)
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/4 cup water

Lava Layer

  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Brownie Batter: In a large bowl, combine the brownie mix, vegetable oil, egg, and water. Mix until just combined, being careful not to overmix. The batter should have a thick consistency.
  2. Layer the Batter in the Slow Cooker: Grease the inside of your slow cooker with non-stick spray or butter to prevent sticking. Pour the prepared brownie batter evenly into the slow cooker.
  3. Add Chocolate Chips: Sprinkle the chocolate chips evenly over the top of the brownie batter to form the molten lava center during cooking.
  4. Make the Lava Layer: In a separate bowl, whisk together the heavy cream, sugar, vanilla extract, and a pinch of salt until the sugar dissolves and the mixture is smooth. Pour this gently over the brownie batter and chocolate chips without stirring to create the lava effect.
  5. Set the Slow Cooker: Cover and cook on low heat for 2 hours. Check around 1.5 hours to ensure it is not overcooking. The center should be slightly jiggly when tapped.
  6. Rest Before Serving: Once cooking is complete, turn off the slow cooker and let the dessert sit for 5 to 10 minutes to firm up slightly.
  7. Serve & Enjoy: Scoop portions into bowls to reveal the gooey molten center. Serve warm, optionally topping with vanilla ice cream, whipped cream, or fresh berries for added decadence.

Notes

  • Do not stir the lava mixture after pouring to maintain the molten lava effect.
  • For a firmer center, cook an additional 15 minutes but watch carefully to avoid drying out.
  • Optional topping ideas include caramel sauce drizzle or crushed nuts for extra texture and flavor.
  • Always grease the slow cooker well to prevent sticking and ease serving.
  • Pair with a scoop of cold ice cream to create a delightful temperature contrast.
