Brownie Batter
- 1 box of brownie mix (about 18 oz)
- 1/3 cup vegetable oil
- 1 large egg
- 1/4 cup water
Lava Layer
- 1 cup chocolate chips (semi-sweet or milk chocolate)
- 1 cup heavy cream
- 1/2 cup sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Prepare the Brownie Batter: In a large bowl, combine the brownie mix, vegetable oil, egg, and water. Mix until just combined, being careful not to overmix. The batter should have a thick consistency.
- Layer the Batter in the Slow Cooker: Grease the inside of your slow cooker with non-stick spray or butter to prevent sticking. Pour the prepared brownie batter evenly into the slow cooker.
- Add Chocolate Chips: Sprinkle the chocolate chips evenly over the top of the brownie batter to form the molten lava center during cooking.
- Make the Lava Layer: In a separate bowl, whisk together the heavy cream, sugar, vanilla extract, and a pinch of salt until the sugar dissolves and the mixture is smooth. Pour this gently over the brownie batter and chocolate chips without stirring to create the lava effect.
- Set the Slow Cooker: Cover and cook on low heat for 2 hours. Check around 1.5 hours to ensure it is not overcooking. The center should be slightly jiggly when tapped.
- Rest Before Serving: Once cooking is complete, turn off the slow cooker and let the dessert sit for 5 to 10 minutes to firm up slightly.
- Serve & Enjoy: Scoop portions into bowls to reveal the gooey molten center. Serve warm, optionally topping with vanilla ice cream, whipped cream, or fresh berries for added decadence.
